I’ve been a vegan since 2006 (vegetarian for 11 years before that). About a year ago I experimented with a 100% raw diet for about 6 months. Though the raw thing didn’t really work out for me it ignited my passion for whole, unprocessed foods.
Why vegan? Because modern farming practices value profit over animal welfare, human and environmental health. Three things that are very important to me.
Why whole foods? Because you are what you eat! Do you want to be over-processed and artificial? I don’t. Fresh foods in their natural state taste great and feel great too. I believe eating is not just about taste but about healing, rejuvenation, and connecting with the earth.
Here are some of the recipes I’ve been playing around with lately. Fresh, whole foods rock my world. I hope they rock yours too : )
